The Luis Guzman statue can actually already be seen in the previous episode. Maybe the episodes were originally intended to be in a different order?

Doubtful. It's more likely that there was a statue somewhere on the Sony lot they were filming that looked vaguely enough like Guzman and they wrote it into an episode.
