I love One Piece, but you should definitely watch Fullmetal Alchemist Brotherhood. Its only 64 episodes kick One Piece 555's ass.
Definitely missing Mad Men, Deadwood, ROME, Downtown Abbey, Generation Kill, Sopranos to name just a few.
House, Dexter, Fringe, The Walking Dead? Seriously?
One Piece & Breaking Bad are excellent choices!

@janshi: I haven't watched Mad Men, Deadwood, ROME, Downtown Abbey or Generation Kill. Since this list is my personal list of tv shows i find to be of exceptional quality i am not gonna add those until i have seen them and share your opinion of their quality.
